Barbecue Chicken Salad Recipe

This barbecue chicken salad recipe is a great way to use leftover barbecue chicken. For dinner one night, take chicken drumsticks or quarters, cover with one bottle of barbecue sauce, and bake at 350 degrees for one hour or until chicken juices run clear.

The next day, chop the leftover BBQ chicken and add it to this salad.

Recipe for BBQ Chicken Salad

Ingredients:

  • Chopped Barbecue Chicken
  • Lettuce or Mixed Greens (in bite-sized pieces)
  • Chopped Tomato
  • Corn
  • Black Beans
  • Monterrey Jack Cheese (shredded)
  • Crisp Tortilla Strips or Chips (crumbled)

Directions: Toss lettuce, chicken, corn, tomato, black beans and tortilla strips in amounts of your choice. Drizzle with barbecue sauce and ranch dressing. Enjoy!
